I discovered this delicious pie about 3 years ago when my beloved asked me to do some research and bake him one because it reminded him of home. It was really good.

We are leaving soon for our honeymoon and we have quite a lot of nuts around. Yesterday, we were  wondering what to do with them and this came to my mind. And I have a friend coming over. It’s always nice to have something sweet to offer.

This is a simple recipe. You will need

  • unbaked pastry dough – Check here for a recipe
  • 3 eggs
  • 3/4 cup (150g) sugar
  • pinch of salt
  • 1 cup (250ml) dark corn syrup (golden syrup)
  • 1 teaspoon vanilla
  • 1 cup (250g) pecans
  • 1 cup (250ml) heavy cream (double cream), whipped to serve.

Preheat the oven to 425F (220C). Line a pie pan with the pastry dough. Instead of chilling and rolling or rolling and chilling , I simply pat the dough into the pan with my fingers.

Combine the eggs, sugar, salt, vanilla and corn syrup in a bowl and blend well.Add the pecan and mix well and pour the mixture into the pie pan.


Bake for 10 minutes then reduce the heat to 350F (180C) and cook for 50-60 minutes or until a knife inserted between the edge and centre comes out clean.
